The Kashmir Kitchen


Kashmiri cuisines is of 2 distinct types – Wazwan and Wurbal. 


Wazwan is the food of the Muslims in Kashmir whereas Wurbal is the cuisine of the Kashmiri pandits.


The food of Kashmiri Pandits show cases grace and has a delicate charm. It does not use onions, garlic and tomatoes to make gravy… instead, curd is used generously. Commonly used ingredients are fennel seed powder, green and black cardamom, star anise, dry ginger powder, kashmiri chillis, kewra, mawal flowers & dry mint leaves. Asafoetida (Hinge) adds a cheeky kick and sets it apart from the Wazwan Cuisine.


Our charming and gracious member Ms.Neelu Kaul who is married to a Kashmiri Pandit will be introducing us to the nuances of Wurbal cuisine which she has mastered over the years.


Get your Senses tingling and be ready to feast on these delicacies… Nadur Yakhim, Dum Aloo, Batt’e, Raddish & Walnut chutney…… And of course…

Kehwa: the world famous Kashmiri green tea!
